Description

These pancakes are one of the tastiest I’ve had. They are pretty simple to make and filled with a certain ‘melt in your mouth’ goodness!

The recipe can be made with Kerns Apricot Nectar in place of milk for an even richer and more flavorful pancake (or for those avoiding milk products).

Once you try these, you’ll never want to go back the the ‘ol pancake mix. (Recipe can also be used for waffles).

Ingredients

  • 2 whole Eggs
  • 3-¼ cups Milk (or Nectar)
  • 2 Tablespoons Vanilla
  • 1 teaspoon Salt
  • ¾ cups Sugar
  • ¾ cups Oil
  • 2 cups White Flour
  • 2 cups Wheat Flour
  • 4 teaspoons Baking Powder

Preparation

In a large bowl beat eggs until fluffy. Add milk, vanilla, salt, and sugar. Mix well.

(See “Notes” at bottom of recipe for Nectar substitution)

Add oil and mix carefully.

Add 2 cups white flour and mix.

Add 2 cups wheat flour and mix again.

Add the baking powder and mix well.

Heat skillet and prepare pancakes.

NOTES:

* The batter can be stirred using an electric beater or wire whisk.

* Baking powder should be added right before cooking.

* You can store leftover batter in the fridge several days. Bring to room temperature and stir before cooking.

* The same batter can be used to make waffles.

* For a slight flavor change, or for those that lactose intolerant, substitute all or part of the milk for Kern’s Apricot Nectar.

Yield: Approx. 8-10 servings. Recipe can be halved.

Can you tell me what Kern’s Apricot Nectar is? I know that is a brand, but is the nectar just a pure juice? We won’t have this brand where I live (France) so I want to know what to look for. My son is allergic to dairy, so I might try these for him. Thanks!

I used apricot nectar to make these. They were simple to make & tasted delicious. I, too, had to add more liquid to get them to the right consistency. Sure gives me an easy & tasty way to use up all the apricot nectar I was given!

I actually prefer a bit thinner pancakes. If you want them thicker, try adding more flour. A thicker batter will generally lead to a thicker pancake.

Mixing the oil “carefully” is merely to avoid mess. Perhaps the word is not needed.
