A sweet and spicy alternative to a classic favorite. Enjoy them the old fashioned way – with maple syrup – or go all out and top them with applesauce.
Combine ingredients in order in a medium sized bowl or large measuring cup. Blend with a wire whisk until large lumps disappear.
Meanwhile, heat your pan or griddle on medium low. Butter or spray with cooking spray. Pour batter onto a hot griddle and cook until bubbles appear and pop. Flip only once and cook until golden brown on both sides.
Serve with butter and maple syrup or applesauce for a truly delicious treat!

Nothing smells better than gingerbread. Well maybe I’m wrong. Could it be pancakes in the morning. Can’t wait to try. You are going to make me even more fat with this breakfast.
