Description

Over the years, this recipe has been the clear winner for our favorite pancakes, except for my son Benjamin–he loves PW’s pancakes best. Maybe she wants to adopt him. Just kidding! Ben’s mine, all mine. But maybe he could come hang out and eat pancakes.

Ingredients

  • 2 cups All-purpose Flour
  • 1 teaspoon Baking Powder
  • 1 teaspoon Baking Soda
  • 2 Tablespoons Sugar
  • 2 whole Large Eggs, At Room Temperature
  • 2 cups Buttermilk
  • 3 Tablespoons Melted Butter
  • 1 cup Wild Blueberries

Preparation

Sift together flour, baking powder, baking soda into a bowl. Stir in sugar. Set aside. In a separate bowl, whisk together the eggs, buttermilk, and melted butter. Add the dry ingredients into the wet. Do not over-mix. Gently fold in the blueberries.

Cook batter in a skillet over medium heat.
