These super-delish healthy Banana Chocolate Chip Pancakes are made from only seven ingredients.
In a food processor, pulse cashews until finely ground. Pulse in baking soda, then pulse in eggs, banana, and vanilla until very smooth. Stir in chocolate chips by hand.
Heat oil in a skillet over medium heat. Spoon batter 1 tablespoon at a time onto skillet, leaving some space in between the cakes. Flip pancakes when bubbles form on the top. Cook for about a minute on second side. Remove pancakes from the skillet and repeat with the remaining batter. Serve with maple syrup or fruit sauce.
