Description

These Baked Pancake Bites have all the flavor of regular pancakes, but are baked in the oven, instead of on the stove. Kid-friendly, easy to make, and portable, you will be craving these pancake bites time and time again!

Ingredients

  • 2 cups Bisquick Baking Mix
  • 2 teaspoons Baking Powder
  • 2 Tablespoons White Sugar
  • 1 teaspoon Vanilla Extract
  • 1 cup Milk
  • 2  Eggs
  • 2 Tablespoons Non-fat Plain Greek Yogurt
  • 2 cups Milk Chocolate Chips
  • 7  Fresh Strawberries, Hulled And Diced

Preparation

Preheat oven to 350 F. Spray a 24 count mini muffin pan with non-stick cooking spray. Set aside. (See note below).

In a large bowl, combine the Bisquick, baking powder, sugar, vanilla extract, milk, eggs and Greek yogurt. Mix well until thoroughly combined. Fold in chocolate chips and strawberries. Pour batter into prepared muffin tins, filling each about 2/3 full.

Bake for 15-17 minutes, or until pancakes are slightly golden on the edges. Remove from oven and let them cool in the muffin tin for 5 minutes. Enjoy!

Notes:
– This recipe yields about 30 mini pancake bites, so either spray two mini muffin pans with non-stick cooking spray, bake the extra batter in a regular muffin tin, or wait until the first batch is done baking and bake the second batch.
– These baked pancake bites are easy to customize, depending on your taste. Feel free to leave them plain, swap out the strawberries for blueberries, add in dried fruit, white chocolate chips, etc.
– If you don’t have a mini muffin pan, these can be made in a regular size muffin tin but the bake time will increase.
