Description

My aunt Carolyn is an excellent cook and her pancake recipe is my all-time favorite. Try adding blueberries, bananas or chocolate chips to the batter.

Ingredients

  • 3 cups Flour
  • 1 teaspoon Baking Soda
  • 1 teaspoon Baking Powder
  • 1 teaspoon Salt
  • 1 teaspoon Sugar
  • 3 whole Eggs
  • 2 Tablespoons Vegetable Oil
  • 1 quart Buttermilk

Preparation

Mix all ingredients together well. Add whatever extras (blueberries, bananas, whatever sounds good) at this point.

Heat up your pancake skillet on medium heat. Pour pancake sized amounts of the batter onto your hot skillet and cook until done (flipping once the bottom is done – you know – like you normally cook pancakes).

These were really good! They made a big batch so I put 1/2 the batter in the fridge and made them the next day as well and they were just as good. A keeper recipe.

I used less milk as I wanted a thicker batter for waffles. These were excellent, I’ll be making them a gain.

These pancakes are just like the ones my mother-in-law used to make and were a big hit with my hubby and brother-in-law! (He just happened to be here when I made them.) She never used a recipe, and my attempts at replicating them always fell extremely short. I’ve had a difficult time finding a recipe that came close to them, and this one is spot-on. They were thin for me, which is how they like them. I like that the recipe makes a big batch. This is exactly what I was looking for! Thanks, lybrarygirl!
