This is the go-to recipe for something that is quick, delicious, and full of vitamins and minerals.
Preheat oven to 425ºF and line a baking sheet with parchment paper.
Once sweet potatoes are washed and chopped, place them in a large bowl. Add olive oil and seasonings, then take your hands and mix the ingredients until fully incorporated.
Pour onto baking sheet and spread out in an even layer. Bake for 20 minutes. Remove the sweet potatoes and use a spatula to flip the sweet potatoes around. Bake for an additional 15–20 minutes.
Remove potatoes from oven and let cool.
Meanwhile, start cooking the add-ins. At a medium temperature, place sausage on a large oiled pan and cook until crispy. Add tomatoes and onion, and cook until tomatoes are broken down and onions are translucent (about 5–10 minutes).
Throw in the sweet potatoes, add Sriracha, and mix all of the ingredients together. This can be served immediately or stored in a glass container.
