Bagel and lox is one of my favorite breakfast dishes! This version has all of my favorite ingredients for this dish, but it cuts out the carbs and fat from the bagel and adds a big boost of protein from the eggs. Enjoy!
Heat a skillet over medium low to medium heat. Crack the eggs into a bowl and add in a splash (about 1 tablespoon) of milk. Beat eggs and milk until well mixed. Put the beaten eggs in the skillet and add in the onions, capers and salmon. Scramble mixture until set, about 2-3 minutes. Transfer the scramble to a plate and crumble the feta cheese over the top. Enjoy!
