Quick and easy recipe that I make for my daughter for breakfast. It’s also a great way to sneak in veggies for those picky eaters!
Preheat oven to 375 degrees. Spray 12-16 mini muffin tins with cooking spray. In a bowl, whisk eggs, milk and pepper. Add cheese and vegetables.
Spoon a tablespoonful into each muffin cup. Bake for 12 to 14 minutes.
If green peppers and mushrooms aren’t your thing, substitute them with your favorite vegetable(s).
