Description

A delicious and easy brunch favorite!

Ingredients

  • 1 Tablespoon Extra Virgin Olive Oil
  • 2 cloves Garlic, Chopped
  • ½  Yellow Onion, Chopped
  • ½ pounds Extra-Lean Ground Turkey
  • ½  Green Bell Pepper, Stem And Seeds Removed, Chopped
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Smoked Paprika
  • 1-½ cup Marinara Sauce (Low Sugar)
  • 3  Eggs
  • Shredded Mozzarella Cheese, For Sprinkling As Desired
  • Salt And Pepper, to taste

Preparation

Preheat oven to 400 F. In an 8″ cast iron skillet on the stove over medium high heat, saute garlic and onion in olive oil until fragrant. Next, add the ground turkey, green bell pepper and spices and cook until the turkey has browned. Then, pour in the marinara sauce and turn off the heat.

Using a spoon, make three little wells in the meat mixture. Gently crack one egg into each well, keeping the yolks whole. Next, take the iron skillet and place it into the oven and bake for 20 minutes. In the last 5 minutes sprinkle on a bit of cheese and finish baking. The eggs will be ready when the whites are fully set, but yolks are still runny. Add salt and pepper to taste and serve.
