Description

French toast is a great weekend breakfast or brunch. What would be even better is if it could be a quick make-ahead breakfast for your weekday meal prep. An easy Instant Pot breakfast (oven directions included) this can be made quickly, and includes four different versions: basic, a savory french toast with sausage and cheese, banana cinnamon, and berry nutmeg!

Ingredients

  • 4 slices Bread
  • 2  Eggs
  • ⅛ cups Milk
  • ¼ teaspoons Cinnamon
  • ⅛ teaspoons Vanilla
  • FOR THE VARIOUS FLAVORS:
  • ¼ cups Cooked Breakfast Sausage, Crumbled
  • ⅛ cups Cheese, Shredded
  • ½ cups Banana, Mashed
  • ¼ teaspoons Cinnamon (optional)
  • ½ cups Berries
  • ⅛ teaspoons Nutmeg

Preparation

Cube the bread. Whisk eggs, milk, and cinnamon in a small bowl then add bread. For one of the other flavors, add or omit flavor ingredients as desired.

For the Instant Pot:
Add 1 cup of water to the Instant Pot. Spoon mixture into slightly pre-greased silicone mold then cover with foil. Insert rack with silicone mold into pressure cooker with one cup of water. Cook on steam for 15 minutes. Note: If you do not have the steam button then you can use the high pressure manual setting.

Once complete, quick release the steam, and cool on a wire rack for a few minutes. Remove foil, and serve immediately or store in an airtight container for up to one week.

If desired, you may broil these for a few minutes in the oven if you desire, but it is not necessary.

For the oven:
Preheat oven to 400ºF. Spoon mixture into pre-greased muffin pans. Cook uncovered for 20 minutes or until cooked through.
