Popular food in Sri Lanka.
Sift the rice flour and put it to a bowl. Add grated coconut, salt and mix well.
Slowly pour in the water, mixing with your fingers as you do so until the mixture resembles bread crumbs.
Place the mixture in a pittu mold and steam for about 7 minutes until cooked (when steam emerges from the pittu mold). Transfer to a plate and cut into pieces.
Serve with curry.
Enjoy.

Dear Caroline
If you like pittu you can made it with out mould.Place the mixture in a Bread pan or metal cups and steam for about 10 minutes until cooked (when steam emerges from the pittu mold). Transfer to a plate.

It’s me again! You’re bringing back my childhood! When I went to Sri Lanka when I was about 7 we ate pittu nearly everyday, partly because it was and is my favourite.
