Description

Hearty and healthy baked oatmeal with mixed berries and nuts is perfect for winter.

Ingredients

  • 2 cups Rolled Oats
  • ½ cups Chopped Mixed Nuts, Divided
  • ⅓ cups Sugar
  • 1 teaspoon Baking Powder
  • 1-½ teaspoon Cinnamon
  • ½ teaspoons Salt
  • 1 whole Egg
  • 2 cups Milk
  • 3 Tablespoons Butter, Melted And Cooled Slightly
  • 2 teaspoons Vanilla
  • 1-½ cup Frozen Mixed Berries, Divided
  • Maple Syrup, To Serve

Preparation

Preheat the oven to 375ºF.

Mix together the oats, half the nuts, sugar, baking powder, cinnamon and salt. Set aside.

In another bowl, whisk together the egg, milk, butter and vanilla.

Generously butter the bottom of an 8×8” baking dish and add half of the mixed berries.

Add the oat mixture over the top of the fruit. Pour the milk mixture over the oats. Use a spoon to make sure the milk mixture is incorporated throughout the oats. Add the remaining nuts and berries.

Bake for 35-45 minutes until the top is golden and the oatmeal is set. Let the oatmeal cool for a few minutes and serve with maple syrup.

The flavor was amazing. I think this might be the best way to eat oatmeal. I found that it was a little to liquidy, so next time I make it I will use 1/4 to a 1/2 cup less milk. I also don’t like to add sugar to breakfast foods, I think it would still be very good without the sugar.
