A fresh and great tasting crunchy and chewy granola. Perfect as a daily snack or cereal, we served it as a topping for plain Greek yogurt.
Preheat oven to 300ºF. Coat 2 cookie sheets with nonstick cooking spray.
Place oats in a bowl and add almonds, sunflower seeds, coconut, and cinnamon. Mix well.
In a separate bowl, combine honey, brown sugar, oil and vanilla. Pour wet mixture into dry mixture. Stir all ingredients together until completely combined.
Spread the mixture evenly into a thick layer on the cookie sheets. Bake for 30–35 minutes, or until golden brown, stirring every 5–7 minutes. Remove from the oven and let cool 5 minutes.
Transfer to a large bowl and mix in the cranberries and blueberries. Once cool, store in an airtight container.
