Quick and easy, this great combination of fluffy stir-fried eggs and sweet tangy tomatoes is perfect with a bowl of steamed jasmine rice.
In a medium bowl, beat the eggs and throw in the pinch of salt to slightly season.
Heat up the oil in a pan and throw in the diced tomatoes. Saute for a couple of minutes before adding the sugar and water. Let the mixture simmer until the water has reduced by half.
Pour the egg mixture over the tomatoes and start stirring and folding the mixture constantly. After about 1 minute, turn the heat off and transfer the eggs immediately onto a platter.
Serve with steamed white rice and enjoy!
