Description

A hearty breakfast for those days when you wake up feeling like you just ran a marathon in your dreams!

Ingredients

  • 5 slices Bacon
  • 3 cloves Garlic, Chopped
  • 1 whole Medium Onion, Diced
  • 1 whole Red Bell Pepper, Diced
  • ¼ teaspoons Seasoned Salt, Plus More To Taste
  • ¼ teaspoons Black Pepper
  • 4 whole Medium Russet Potatoes, Diced
  • 4 whole Large Eggs
  • Chives, Chopped, For Garnish

Preparation

Place bacon in a cast iron skillet. Put the skillet in the oven and set temperature to 400ºF. Cook bacon about 15 minutes and remove from oven. Turn oven temperature down to 350ºF.

Remove bacon from skillet and drain on paper towels.

Put the skillet with hot bacon grease on the stove over medium high heat. Saute garlic, onion, and red bell pepper about 5-7 minutes. Add seasoned salt and black pepper.

Add potatoes to skillet and fry for 10-12 minutes or until potatoes are just starting to brown. Crumble the bacon into the skillet and stir to combine. Take the skillet off the heat.

Make 4 wells in the potatoes and crack in the eggs. Sprinkle eggs with season salt.

Put the skillet back in the 350ºF oven and bake until eggs are cooked through, about 15 minutes for solid yolks, 10-12 minutes for slightly runny yolks.

Garnish with fresh chives, more season salt, and a dash of hot sauce if desired.

Who doesn’t love breakfast for dinner? This hearty dish makes the cut! Having diced and frozen peppers and onions reduces prep time. I diced the potatoes pretty small to be sure they cooked through. A little cheese on top is a nice touch as well. I look forward to making this again!!

This has been in my recipe box for a while and I finally tried it. Very good! A good evening meal when you forget to defrost! Will make again.

This is a great hearty meal. After making it twice , I would do the following to speed it up and simplify: cook the bacon in one skillet while cooking everything else in butter in another skillet. I would also parcook the potatoes in the microwave to soften them up a bit or else they take a while to cook. Then I would fry the eggs in some of the bacon grease and slide on top. This way you don’t have to turn on the oven and can watch the eggs more closely to make sure they are not over or undercooked. (I’m lousy at baking eggs!).
