Description

Try something new and different as a breakfast/brunch dish.

Ingredients

  • 4 whole Large Size Green Tomatoes
  • ¼ sticks Sweet Cream Butter, Melted
  • ½ cups Grated Parmesan Cheese
  • 1 cup Seasoned Italian Breadcrumbs
  • 8 whole Beaten Large Eggs
  • ½ cups Light Cream
  • ¼ teaspoons Salt And Black Pepper

Preparation

Preheat oven to 400 F. Rinse the green tomatoes and dry them on paper towels. Slice the tomatoes 1/8″ thick and set slices aside.

Add the melted butter into a 9 x 11 x 3 non-stick sheet pan and spread it out with a rubber spatula.

In a small bowl add Parmesan cheese and Italian breadcrumbs and mix together with a fork.

In a large bowl crack open the 8 eggs. Using a whisk or hand mixer on medium speed mix the light cream into the eggs. Add salt and black pepper and stir. Add egg mixture into the sheet pan and spread it out to cover all corners of the pan. Add sliced green tomatoes over the top of the egg mixture in a single layer. Sprinkle the Parmesan cheese and bread crumbs over the tomatoes.

Cover with foil and bake at 400 F for 10 minutes. Remove the foil and bake for an additional 10 minutes. Total bake time is 20 minutes. Enjoy!
