Description

Great for Sunday brunch or a quick bite on the way to work or school.

Ingredients

  • 12 slices Bread (or 6 If The Slices Are Large)
  • 1 whole Onion
  • 10 whole Eggs
  • 1 Tablespoon Seasoning (e.g.: Mrs Dash Table Blend)
  • 1 pinch Salt And Pepper
  • ½ cups Chives
  • ½ cups Cream
  • 1 cup Cooked Chopped Bacon
  • 2 cups Shredded Cheese

Preparation

Cut holes out of the bread slices with a biscuit or cookie cutter and place the hole into the bottom of each of the muffin pan holes.

Chop the onion and saute it in a pan over medium heat for about 10 minutes, until it’s softened.

In a bowl, add the eggs and seasonings. Blend together. Chop the chives and throw them into the egg mixture together with the sautéed onion. Throw the rest of the ingredients into the egg mixture (cream, cooked bacon and cheese) and stir well.

Using a ladle or measuring cup, pour the egg mixture into each of the muffin tins, on top of the bread circles.

Bake in a 350F oven for 20 minutes or until a toothpick comes out clean when inserted.

Other ingredient options: cooked sausage, cooked hamburger, ham, mushrooms, jalapenos, tomatoes, etc.

I love the idea! I made these on a Sunday and then had them for the rest of the week for breakfast! I added some mushrooms, sausage, spinach, and tomato. I didn’t add as much seasoning as it called for, and I was glad. The seasoning was a little overpowering for me. And I think also because I added so much extra stuff into it, I needed more eggs. But overall a very good dish.

These are great! However, the directions need to include “grease or oil the muffin cups.” Guess how I found out? I scooped them out with a spoon and they were delish. Next time, I will grease the cups and they will be perfect.
