Description

Unless you’ve visited or lived in the Southwest, you probably haven’t heard of Migas, a delightfully flavorful scrambled egg dish made fabulous with the addition of bell peppers, jalapenos, onions, cheese, and—the best part—fried, chopped corn tortillas.

Ingredients

  • 4 whole Corn Tortillas
  • 1 whole Jalapeno, Seeds And Membranes Removed, Finely Diced
  • 4 whole Plum Tomatoes, Roughly Chopped
  • 1 whole Green Pepper, Roughly Chopped
  • 1 whole Red Bell Pepper, Roughly Chopped
  • 1 whole Medium Onion, Chopped
  • 12 whole Large Eggs
  • 1 cup, 2-⅔ teaspoons, ⅞ pinches Cotija Cheese, Grated (may Use Cheddar, Monterey Jack, Etc.)
  • ⅓ cups Cilantro, Chopped
  • 1 Tablespoon Butter
  • 1 Tablespoon Olive Oil
  • ¼ cups Half-and-half

Preparation

In a bowl, whisk together eggs and half & half. Salt and pepper eggs, then set aside.

In a small skillet over medium heat, heat oil and fry each corn tortilla just until crisp. Remove to a paper towel-lined plate to drain. Chop tortillas and set aside.

In a large skillet over medium-high heat, melt the olive oil with the butter. Add onions and bell peppers and cook until starting to turn brown/black, about 3 to 4 minutes. Add in diced jalapenos and stir to combine. Add tomatoes to the skillet and stir around, then add tortilla pieces, stirring gently to combine.

Reduce heat to low.

When the heat has decreased, pour egg mixture into skillet. Stir gently to cook with the peppers, folding mixture very gently as it cooks. Add in grated cheese and chopped cilantro, and stir to combine. Serve with black beans and iced coffee.

Just when I thought I’d tried it all; you post this recipe and changed my life. Made this last night for dinner and it was literally wolfed down. Amazing flavors, can’t believe I’ve never tried this before. Thank You, Ms.Rhee!

Love this, I added 2 ears fresh corn kernels and used 2 jalapenos. One more corn tortilla would’ve been nice.

I love, love, love this recipe. I’ve made it so often that I don’t even have to consult the book anymore. Well, most of the time. I combine it with my brother’s guac recipe and life (as well as the food). is. good.

We LOVE Migas! My family requests this on a weekly basis. I think that’s pretty good coming from a 4 year old and 1 year old!

this is freakin amazing! I cut the recipe in half and used an anaheim pepper in place of the green/red bell. Also used some leftover homemade corn tortillas (yumm). I seriously can’t understand why this isn’t rated 5 mitts!

My daughter made this for me. Full of flavor…used the Verde sauce (adds lots of flavor). So yummy…definitely want this again and again!

I loved this! It was even good warmed up in the microwave the next day. Will definately make again. May use a different cheese, the Cojita seemed a bit chewy to me and I prefer a more melted consistency.

This recipe lacked flavor and my husband, who usually loves everything, said “I wouldn’t cook this again if I were you.” I do think adding sausage would help a lot.

The family LOVED it! But I am cheater and a tweak-er! So I used Rotel rather than chopping tomater’s and jalapenos… And I added Country Potatoes and Breakfast Sausage. But my husband and son asked for seconds. I may toss the fried tortilla’s on the side caz they got kind of soggy. But all in all it will be a regular dish in my house.
