Prepare Sunday night and have breakfast ready for the whole week!
Preheat oven to 350 F. Generously spray a 12-count standard size muffin tin with non-stick cooking spray.
Mix eggs, additional egg whites and milk in a large bowl. Fold the green chilies and cheese into the egg mixture.
Pour egg mixture into the prepared pan. Fill the muffin tins 2/3 of the way full. Bake at 350 F for 15 to 20 minutes or until eggs are set.
