Individual little savory muffin delights, these frittatas are easy and convenient. They can be made ahead and taken as a quick weekday breakfast, or used as part of a more elaborate weekend brunch.
They are also highly customizable. I used ham and swiss cheese, but you could use bacon and cheddar cheese, you could leave out the meat to make it vegetarian, add vegetables, onions, herbs – the possibilities are endless!
Preheat oven to 375ºF.
Generously grease a muffin tin with butter, set aside (I used a jumbo muffin tin with 6 cups—you could use a muffin tin with smaller cups/more cups).
Beat the eggs with the milk in a large bowl.
Divide the ham and cheese equally between the muffin cups, then pour the egg mixture equally on top of the ham and cheese. Top with salt and pepper.
Bake for 25 – 35 minutes or until the top is starting to brown. Note: cooking time will vary depending on the size/number of the muffin cups you use.

I’ve made something similar to these and I use Bakers Joy baking spray and it works wonderfully to keep them from sticking. Hope this helps:)

Hi squeadunk – I used quite a bit of butter to grease my pan, and they still stuck but just a little bit. Make sure to use a thick layer of butter, or you could try oil instead. I will play around with the recipe and let you know if I find anything that works better!

How do you keep them from sticking? I love these, but they stick so bad to my pan. I also tried cupcake liners, but they turned out weird.
