A great way to start the day.
In a medium size bowl add the eggs, milk, pepper, and salt. Whisk together and set aside for a moment.
Heat a medium size skillet on medium heat and add the butter. Next, add the real bacon bits, green onions, and kale. Stir together and cook until the kale starts to wilt slightly (about 4 minutes). Add the eggs and stir together with the kale mixture.
Move the eggs around with a spoon or spatula as they’re cooking. Continue to cook the eggs and stir together with the other ingredients. Just before the eggs are done cooking (after about 3 to 4 minutes), add the cheese.
Stir in the cheese with the egg for about 2 minutes or until it melts. Garnish with the chopped green onions and bacon bits. Serve hot right out of the skillet.
