I keep 2 batches of this on hand at all times…one for my breakfasts and one for hubby’s snacking. Otherwise, I’d be making this a couple of times a week.
Preheat oven to 275 degrees.
In large bowl, combine first 5 ingredients. In a saucepan over medium heat, bring brown sugar and water to a boil.
Remove from heat and stir in oil and vanilla extract. Pour over oat mixture and toss to coat. Pour onto 15″ x 10″ baking sheet.
Bake in oven for 1 1/2 hours. Stir in cranberries. Cool and store in airtight container.
