Description

Chocolate coconut granola is so much more than a breakfast recipe. It’s versatile enough for breakfast, a snack, dessert or a topping!

Ingredients

  • 2 cups Rolled Oats
  • ¾ cups Unsweetened Shredded Coconut
  • 3 Tablespoons Cocoa Powder
  • 2 Tablespoons Chia Seeds
  • 1 teaspoon Cinnamon
  • 1 cup Pecans, Chopped
  • ½ teaspoons Salt
  • 3 Tablespoons Coconut Oil
  • ¼ cups Honey
  • 1 teaspoon Vanilla Extract
  • ½ cups Dark Chocolate Chips

Preparation

Preheat oven to 300ºF and prep a large baking sheet.

In a large bowl, combine rolled oats, coconut, cocoa powder, chia seeds, cinnamon, pecans and salt. Mix until combined.

In a small saucepan over low heat, add coconut oil, honey, and vanilla extract. Stir until coconut oil has melted and then pour it over the oat mixture. Thoroughly mix.

Pour the oat mixture onto the baking sheet. Bake for 20 minutes, then stir the mixture. Bake for another 15 minutes, or until fragrant.

Allow to fully cool in order for the granola to clump. Add dark chocoalte chisp. Serve immediately or store in an airtight container
