Breakfast burritos with creamy goat cheese, eggs, potatoes, chipotles in adobo, and chicken sausage.
Heat oil in a frying pan over medium heat.
Add potatoes, red onion, and sausage and cook until potatoes soften and sausage is cooked all the way through, about 5-6 minutes. Mix in chipotle pepper.
In a small bowl, scramble eggs and then add to frying pan, stirring constantly to incorporate. Once the eggs are cooked, top with pepper jack cheese.
Warm tortillas and then assemble by spreading half of the goat cheese and the egg/sausage/potato mixture. Top with green onions and salsa, then roll to form burrito.
