Are you looking for a yummy and satisfying breakfast you can make in minutes? Then look no further. With so many studies touting the benefits of eating a good breakfast we all need healthy breakfast recipes. This is the perfect combination of whole grain bread, low-fat dairy and fruit.
Place one layer of bananas on a slice of bread. Next, combine the ricotta, vanilla, syrup and blueberries in a small bowl. Place ½ of the ricotta mixture over the bananas. Top with another slice of bread.
Combine the egg, milk and cinnamon in a shallow bowl. Dip the stuffed bread into the egg mixture and turn it over to coat both sides.
Heat a non-stick pan over medium heat. Spray the hot pan with cooking spray. Place the stuffed French toast in the hot pan and cook for 2-3 minutes. Gently turn over the sandwich and cook for another 2 minutes until the toast is golden brown. Remove sandwich from the skillet. Repeat to make the second serving. Serve immediately.
