Description

A delicious make-ahead, vegetarian, healthy breakfast yogurt parfait recipe that you can easily make in 15 minutes or less. It’s protein-packed, and it will make your future breakfasts effortless!

Ingredients

  • FOR THE HONEY YOGURT:
  • 2-½ cups Greek Yogurt
  • 2 Tablespoons Honey
  • FOR THE OATS:
  • 1-½ cup Rolled Oats
  • FOR THE BERRIES:
  • 2-½ cups Mixed Frozen Berries
  • 1 Tablespoon Water
  • ½ Tablespoons Honey

Preparation

For the honey yogurt:
Put yogurt and honey in a bowl. Slowly stir until half-mixed, you want little pockets of honey rippled through the yogurt. Set aside.

For the toasted oats:
Preheat a pan over medium heat, then add rolled oats. Stir oats in the pan every 30 seconds for about 5–6 minutes until oats have gone slightly darker in colour and are nicely toasted. Transfer to a bowl and set aside.

For the berries:
Put frozen berries, water and honey in the pan, then bring to a boil over high heat. Once mixture is boiling, turn heat down and simmer berries for another 4–5 minutes.

Once berries have defrosted, slightly mash with a fork. Continue simmering for another 3–4 minutes stirring occasionally.

To assemble, get the glass that you want to serve the parfait in. Start the layering process by adding some stewed berries, followed by a thin layer of oats, a layer of yogurt, another thin layer of oats, another layer of berries, a thin layer of oats, one more layer of yogurt, then finally, sprinkle some oats on top and garnish with any herb you have available.

Repeat with remaining parfaits, then store in the fridge or freezer.
