Description

The basic building block for a great bowl of breakfast oats!

Ingredients

  • 1-½ cup Coconut Milk
  • 2 Tablespoons Brown Sugar
  • 1 pinch Kosher Salt
  • 1 pinch Cinnamon
  • 1-¼ cup Chopped Fresh Fruit, Bite Size Pieces, Divided
  • 1 cup Gluten Free Oats

Preparation

In a small pot over medium heat, add coconut milk, sugar, salt and 1 cup of the chopped fruit. Bring to a simmer and add the oatmeal. Reduce the heat to medium low and stir often, cooking the oatmeal for about 10 minutes until oats are tender and liquid has cooked down.

Transfer oats to a bowl and garnish with extra fresh chopped fruit and any other toppings.

Here are a few suggestions for toppings and add-ins:
coconut sugar or brown sugar
honey or agave for drizzling
chopped walnuts, almonds or pistachios
dried fruit
