Description

Easy Baked Pumpkin Oatmeal. Tastes like fall!

Ingredients

  • 2 cups Quick Cooking Oats
  • ⅓ cups Brown Sugar, Plus 1/4 Cup For Topping
  • ⅔ cups Milk
  • 1-½ Tablespoon Butter, Melted
  • 1 whole Egg
  • 1 whole Egg White
  • 1-½ teaspoon Baking Powder
  • ¼ teaspoons Salt
  • 1-½ teaspoon Vanilla Extract
  • ¼ teaspoons Cinnamon
  • ⅛ teaspoons Cloves
  • ⅛ teaspoons Nutmeg
  • ½ cups Pure Pumpkin

Preparation

Preheat oven to 350ºF.

In a large mixing bowl, add all your ingredients, minus the 1/4 cup of brown sugar for the topping.

Spread everything into a 9×13 greased pan.

Sprinkle the top with the remaining brown sugar. Bake for 16-18 minutes. Serve warm.

Feel free to add milk, cream, fruit, etc.

This sounds delicious. Can’t wait to try it. Do you think it would work to prep this the night before and bake it off in the morning? Or bake it off the night before and reheat in the microwave for those super-busy mornings?

Loved this! The first time I made it exactly as written and it was great. The second time I cut the sugar back to about 1/4 cup in the mixture and just a sprinkling on top and it was still delicious. Definitely a recipe I will keep coming back to.
