An oatmeal raisin cookie, in scone form. Yes please!
Preheat oven to 400 degrees F. In a large mixing bowl, combine the flour, oats, baking powder, baking soda, salt, cinnamon, and raisins. Set aside.
In a smaller bowl, combine the honey, kefir, egg, and vanilla. Mix well.
Cut the cold butter into the flour mixture, using a pastry blender. Work it in until the mixture resembles coarse meal. Stir in kefir mixture, only until combined. Do NOT over-stir.
Pat mixture out into a circle on a baking stone. Cut the circle into 8 wedges and separate slightly.
Combine sucanat and cinnamon. Sprinkle over scones.
Bake 15-17 minutes or until golden and insides are done.
