Great light replacement for cornbread with any meal.
Combine flour, sugar, baking powder, and salt in a large bowl. Cut in butter with a pastry blender until it is crumbly. Stir in the cheese. Stir egg and half-and-half together. Slowly add the flour mixture until all is moist. Turn dough out on a lightly floured surface, knead 3-4 times, and gently roll into a ball. Shape dough into a 7-inch circle on an ungreased baking sheet. With a sharp knife, cut into 6 wedges, but do not separate.
Bake at 400ºF for 16-18 minutes or until golden. Remove from oven and brush with melted butter. Best served warm! (But cold is good, too. And lukewarm.)
