Simple prep, tasty result. Great for a work or school night dinner.
1. Preheat oven to 350 degrees.
2. Hollow out bell peppers, removing seeds and membranes; rinse. If desired, cook peppers in boiling water.
3. Cook beef and onion in a skillet over medium heat for 8 – 10 minutes, stirring occasionally until beef is brown; drain. Stir in rice, corn, salt and garlic; cook until hot.
4. Stuff peppers with the beef mixture plus some of the cheese, if desired. Stand peppers upright in an ungreased square baking dish.
5. Cover peppers and bake for 45 minutes. Uncover, add more cheese, and bake 15 minutes longer until peppers are tender.
Note: if preferred, you may eliminate the garlic and onion. You can also add tomato sauce if desired.
