A quick and easy Mexican inspired meal!
Brown your ground beef in a skillet and as it cooks, break it up with a masher; you want it to be very fine. Once browned drain it to remove any excess grease.
Place all of your seasonings in a small bowl and whisk them together and add a little of the mixture at a time to the meat and taste in between until it is seasoned to your liking.
Take a flour tortilla and place it on a flat surface and sprinkle some cheese down the middle, then spoon some of the meat down the middle, then a little bit more cheese, so the meat has something to stick to on both sides – and so it all doesn’t fall out as you’re working with them. Then roll up the tortilla. Repeat until you have filled all of your tortillas.
Warm up a griddle or a fry pan with a small amount of vegetable oil, just enough to barely coat it so the tortillas can crisp up. Place your tortillas, seam side down, on the hot surface and cook until golden brown and crisp on one side, then flip with a spatula and repeat until the other side is crispy and golden brown.
Serve with salsa and/or sour cream, if desired.

I used leftover taco meat we had in the freezer and made these. They are easy and yummy good!
