Description

When the cold Minnesota winters are blowing outside, this is a warm and tasty soup to keep the chill away. Serve with some fresh hot bread and you got a wonderful meal that is full of nutrients. Chock full of wildrice, chicken, veggies, cream and butter, it’s just the way a creamy soup is supposed to be!

Ingredients

  • 2 Tablespoons Olive Oil
  • ½ cups Diced Onion
  • 2 cloves Garlic, Minced
  • 10 cups Water
  • 2 cups Sliced Carrots
  • 1 cup Sliced Celery
  • 1 cup Cubed Potatoes
  • 1 cup Wild Rice (uncooked)
  • 3 cups Cubed Chicken, Raw
  • 1 teaspoon Thyme
  • 1 teaspoon Kosher Salt
  • ½ teaspoons Black Pepper
  • 1 teaspoon Seasoned Salt
  • ½ teaspoons Celery Salt
  • ½ sticks Butter
  • 5 Tablespoons Flour
  • 3 cups Heavy Cream Or Half-and-Half (or A Combination Of Both)

Preparation

In a large stock pot, add olive oil and onions and just cook until tender and a little browned. Add minced garlic and cook for just a minute so as not to burn.

Add water, bring to a boil, add carrots, celery, potatoes, wild rice and chicken (all raw/uncooked). Add spices, reduce heat, cover and simmer for 50 minutes, until rice is tender.

In a separate pan, melt butter. Stir in flour, then stir in cream. Cook and stir until bubbly, about 1 minute. Slowly add cream mixture to rice mixture, stirring constantly. Heat through and enjoy.

This soup is actually better the next day after the flavors have had a chance to marry and get all happy. You may need to add more cream (or milk if you prefer) if it thickens too much after cooling.

Also, if you’re grossed out about cubing raw chicken or cooking your veggies with it, you can add cooked/cubed chicken at the end with the milk, but you might want to substitute the water for chicken broth, or the flavor won’t be there (but maybe back off the seasonings if the broth is well seasoned, especially the salt). I just like how this soup makes its own broth as it cooks everything together; I’m kinda lazy that way! Enjoy!

Hands down delicious. I will make this again for sure. It is heaven in a soup bowl. I was looking for a recipe to replace the commercial soup that I liked but was moving away from due to all the crap in it. This is 10x better,so easy to make and I like knowing every ingrediant that goes into it. A little Italian cheese on top and a shake of green Tobasco, YUM!! Thank you for posting! <3

Made this last night for today and thought it tasted pretty good then. But OMG! Tonight…it was way better. I couldn’t use the heavy cream because my husband is lactose intolerant, so I just used Lactaid milk instead, and it was still great. The husband thought so too. He’s on bowl #4. :)
