Meatloaf can go wrong—it can go so wrong. But it can also go sooo right.
Rules:
The taste should be in the meat. Yeah, the sauce is important but it shouldn’t be what carries your meatloaf; make the meat taste worth it.
NEVER cook meatloaf in a bread loaf dish. Never!
Heat oven to 350F.
Cut up the onion into small bite size chunks and separate into two piles. Line a cookie sheet with parchment paper.
In a large bowl, add in ground beef, half of your onions, salt, pepper, bread crumbs, 1 teaspoon dried mustard, oregano, parsley, 1/2 cup Worcestershire sauce, and mix it all together until fully combined. Pour the mixture onto the cookie sheet and form into a loaf. Run a sharp knife over the loaf every inch or so and slightly slice the top of your loaf. Set aside.
In a small pot add in ketchup, brown sugar, butter, the rest of the onions, vinegar, remaining 1 teaspoon dried mustard and remaining 1/2 cup Worcestershire sauce. Heat on medium-high heat until butter is melted and brown sugar is dissolved. Pour over the meatloaf.
Cook meatloaf for at least 90 minutes, then let it rest for 5 minutes.
