A 5-minute salad that’s yummy, creamy, nutritious and filling! I’m having it with sweet bun for lunch (like right now). I was in a total rush this morning so this works just great.
1. De-seed the avocado, cube it in the skin and scoop it out into your bowl. Because it’s really ripe, it’s creamy so you don’t have to mash it.
2. Stir in all the ingredients, adjusting to taste.
3. Voila! Good alone or with bread for a light lunch or even as a salad side for steak or some meaty dish.
Note: If I had more than 5 minutes, I’d add maybe 1/2 chopped white onion and whatever else I could find.
