A beautiful, relaxing dinner at home can be even better than going out. This steak is divine—big flavors of garlic, parmesan cheese, and dijon mustard can make even inexpensive cuts of beef taste like a 5-star meal.
Place olive oil in a small preheated saute pan over medium high heat. Add garlic and pan roast until soft, about 5 -10 minutes. Drain and let cool. Add garlic to a small bowl and mash with a fork. Add thyme and mustard and mix well, making a paste.
Preheat oven to 450 degrees.
Season steaks with salt and pepper and lightly drizzle with olive oil on both sides. Cook steaks on a hot grill for 4 -5 minutes each side (you want them undercooked because they will finish in the oven). Remove from grill and place on a baking sheet. Cover each steak generously with the garlic paste. Top with a very generous amount of parmesan cheese. Place in oven and bake 6-8 minutes, until cheese is melted and crusty.

Are you sure about the garlic being roasted in a pan of olive oil over MEDIUM HIGH heat for 5 – 10 minutes?? This seems extremely high!!
