Much like the famed dish that stars chicken, this one is perfect for vegetarians every where!
Coat the bottom of a large, deep skillet with vegetable oil, about 2 tablespoons worth.
When it’s nice and hot, add the tofu and cook on high to brown on all sides.
While that’s happening mix together the soy sauce, water and orange juice, then add the corn starch, ginger (mince some and grate some), garlic and cayenne pepper, stir it up and set it aside.
When the tofu is all brown, reduce the heat to medium and add a few pieces of tofu to the sauce. This will help warm the sauce up to the temperature of the tofu.
Then pour the whole bowl of sauce back into the skillet and you’ll see the sauce instantly thicken into a glaze. Let it reduce and thicken for another 2-3 minutes and you’re done!
Serve hot over white (or brown) rice and enjoy!

Very good sauce recipe! I even passed it along to my non-vegitarian friends to use on chicken.
