Description

Spinach, rice, cheese and eggs – all wrapped up in a crescent roll. Major yum.

Ingredients

  • ½ cups Onion, finely chopped
  • 1 clove Garlic, Minced
  • 2 Tablespoons Oil
  • ¼ teaspoons Salt
  • 10 ounces, weight Package Frozen, Chopped Spinach, Thawed
  • ⅛ teaspoons Cayenne (or More)
  • ½ cups Cooked Rice
  • 1-½ cup Mozzarella Cheese, Shredded
  • 3 Tablespoons Parmesan Cheese, Grated
  • 2 whole Eggs, Slightly Beaten
  • 2 Tablespoons Milk
  • 8 ounces, weight Package Crescent Rolls

Preparation

Put onion and garlic in a skillet and cook in the oil until soft. Stir in salt and pepper.

Squeeze the spinach to remove most of the liquid (I use a cheesecloth for this).

Combine the garlic/onion mixture, spinach and all remaining ingredients except the rolls.

Open the can of crescent rolls, trying not to flinch when it pops open. I don’t have much success with this.

Separate the rolls into 8 triangles. Slightly flatten them on a floured board to make them larger and thinner.

Place 1/4 – 1/3 cup of the spinach filling on the fat end of the triangle.

Begin rolling up from the fat end.

Place the filled rolls, point side down, in a greased pie plate. Tuck any extra filling in between the rolls.

Bake 25-30 minutes at 350F.

The leftovers make excellent breakfast food!

I made this pretty much “as is” except I subbed fresh spinach… but then when I was putting the rolls in the pie plate I had SO much leftover filling that I decided to dump it all in the pie plate and then add a second roll of crescent rolls as a “top crust”… It turned out great and both my husband and I enjoyed it very much!

I found this recipe in a mad scramble to find a vegetarian main dish to bring to a friend who had just had a baby…i had all the ingredients for this and it had good reviews…so thats how this was selected! I doubled the recipe so that my own family could have this for dinner as well, and also substituted kale for the spinach. It turned out great! Even my 2 year old ate it.

I made this the day after you posted it. I thought I had made a comment. Sorry. It was delicious. I decided to make it because I needed to use up the rolls before the expiration date. And I had all the ingredients on hand, including the cooked rice. You are right! They make great leftovers for any meal. DH loved them.
