Not your mama’s green salad! A spin off of a salad I had at the South Fork Lodge on the South Fork of the Snake River. I’ve been dreaming of it ever since! Spinach, leeks, feta, roasted almonds and smoked salmon.
Roast the almonds in a 350-degree oven for about 10 minutes. It adds so much smoky flavor to the nuts!
Toss the spinach, leeks, feta, almonds and your favorite salad dressing in a bowl. I used a champagne vinaigrette. Top with the salmon and serve. Dream about it nightly.
