Description

Crisp on the outside, fluffy on the inside, and filled with the luscious combination of chocolate and bananas inside. This easy recipe comes together quickly and works for both standard and Belgian waffles.

Ingredients

  • 4 whole Eggs
  • 4 cups All-purpose Flour
  • 1 Tablespoon Granulated Sugar
  • ½ teaspoons Salt
  • 2 Tablespoons Plus 2 Teaspoons Baking Powder
  • ⅔ cups Vegetable Oil
  • 3 cups 2% Milk
  • ½ teaspoons Vanilla Extract
  • 1 cup Mashed, Ripe Banana (about 3 Large)
  • ⅔ cups Semi-sweet Mini Chocolate Chips

Preparation

1. Preheat waffle iron.
2. Whisk eggs until well blended and fluffy.
3. Add remaining ingredients, except for the banana and the mini chocolate chips (sugar, baking powder, salt, flour, milk, vegetable oil and vanilla). Whisk until well combined, batter will be slightly lumpy.
4. Stir in mashed banana and mini chocolate chips.
5. Lightly spray the hot waffle iron with cooking spray.
6. Pour batter onto waffle iron. (Standard 6” waffle irons should take about ½ cup of batter. For my 8”x 8” Belgian waffle iron, I use about 2 cups of batter.)
7. Bake about 5 minutes for 6” waffles, or about 10 minutes for 4” x 4” Belgian, or until steaming stops and waffles are golden brown.

This recipe is easily halved for fewer waffles. Or better yet, freeze the cooled leftover waffles in a single layer in a zippered storage bag. When ready to eat again, pop frozen waffles in the toaster for a regular toast setting.

I can relate! I can’t even tell you how often I have left the last waffle in the iron until it is cooked to a crispy drywall-like consistency! I often make these multigrain with whole wheat flour, wheat germ, and ground oatmeal. This kids love them!

Yum! I was inspired by this recipe and made multigrain waffles that my kids adored! I made enough changes to both the dry and wet ingredients that I’ve got to type it up before I forget what I did. I would love to comment about how well they reheated, but I left the last bit of batter in the waffle iron and spaced out for a while so they got too crispy. Oops!

My family loves these. I make a full batch and freeze the leftover waffles. Pull them out of the freezer and pop them in the oven for a couple minutes and they are great!

Very yummy!!! I made these this morning and made only a half batch, next time I’ll make the whole batch as they were so good the kidlets gobbled them up!

This was delicious! I subbed half wheat flour, omitted the sugar, used vanilla almond milk, and was all out of chocolate chips, so we went with pb ones instead. It was excellent. Made plenty for our family of four, and had 5 left over. Topped it with 1/2 c. pb melted for 30 sec in the microwave, then mixed with 1/3 c. maple syrup and 1/2 tsp vanilla. Definitely my go-to recipe when my bananas get too ripe.

I’m not a big banana fan, but I was in a pinch the other day when I had forgotten to buy pancake mix and wanted to make waffles! Cutting this recipe in half was PERFECT for two, and this recipe was so simple and delicious I don’t think that I will ever make waffles from a mix again!
