Description

I love Panera’s soups. I wanted to replicate one of their soups quickly, so this is what I came up with. It’s so good that I make it regularly when the weather is cold and time is short. Serve it with a thick slice of warm, crusty bread and you’re in business!

Ingredients

  • 1 whole Sweet Onion, Diced
  • 1 cup Diced Celery
  • 1 cup Diced Carrots
  • 2 Tablespoons Extra Virgin Olive Oil
  • 4 cans (14 Oz. Size) Swanson Low-Sodium Chicken Broth
  • ½ cups Water
  • 1 box Wild Rice And Long Grain Rice Mix, 6 Ounce Box
  • 3 cups Diced Rotisserie Chicken Meat
  • 1 can (10 Oz. Size) Condensed Cream Of Chicken Soup

Preparation

Cook onions, celery, and carrots in olive oil until tender. Add 1 can of chicken broth plus 1/2 cup of water. Add contents of wild rice mix. Bring to a simmer and simmer for 25 minutes or until all liquid is absorbed. Add remaining cans of broth and the rest of the ingredients. Bring to a simmer and simmer for 10 minutes.

This did taste like Panera’s! Last night it was chilly and wet, my husband and son had a cold, and I was looking for a quick, easy soup recipe to fix. This was very easy, tasty, and everyone loved it! I had to cook my chicken in the microwave, but that was faster than running to the grocery for a roasted chicken! We served it with some honey oatmeal rolls I made in my bread machine, and it was the perfect meal for a rainy day!

This is the best wild rice and chicken soup recipe I’ve ever made. I will definately be making this again and I think it will freeze well too. It’s way better than store bought for sure!!! Very kid friendly too.
