Wonderful, easy way to have eggplant Parmesan in a hurry!
Preheat oven to 400 degrees.
In a microwave safe bowl, melt butter and set aside. In another bowl, combine the bread crumbs and oregano and set it aside.
Cut the eggplant into 6 slices, each 1/2″ thick. Dip the slices in the melted butter, coating well, dredge them in the bread crumb mixture and place into a 9×13 baking dish.
Top the slices with 2 tbsp. of the spaghetti sauce, 1 tbsp. Parmesan and 1 slice of the mozzarella.
Bake in the oven for 15-17 minutes or until the cheese is completely melted and slightly browned. Remove from the oven. Serve and enjoy!

Delicious!! I just finished eating it, and can’t wait for the leftovers tomorrow! I wasn’t sure about baking it rather then frying, but I think the butter added to the crispiness!! I loved it!!

This dish is so good and really easy! It is my new favorite way to eat eggplant! I used shredded mozzarella in stead of slices because that is what I had, and I had to put my slices on a cookie sheet because there were too many to fit in the 9×13 pan. It turned out great.

I made this last night for my family and it went lightning fast! They left me the smallest piece which was so very nice of them, don’t you think?
