A lovely dish to make for company.
Place beef on a cookie sheet. Mix the salt, pepper and mustard together. Using your hands, coat the beef with this mixture. Roast in a 400 degree oven for 40 minutes (medium to medium rare).
Remove meat from the oven and tent with aluminum foil. Let sit for 15 minutes.
For the Gorgonzola sauce, place cheese in a food processor, using the metal blade, process.
Add the cream cheese, mayo, sour cream, onions, salt, pepper (to taste), and Worcestershire sauce. Process until smooth.
Serve the sauce at room temperature.
