This is a German staple. Children love it and it is quite simple to prepare. Do not be fooled by the onions in it: this is served with apple sauce and is a sweet dish. Trust me on this!
Heat some canola (or other plain) oil to prepare for frying.
Grate the potatoes and drain the juices. Grate the onion finely.
Mix the potatoes, onion, flour, salt and eggs together into a dough. With the help of two tablespoons grab a bit of the dough, carefully drop it into the hot oil and flatten it into a patty shape. Fry until golden brown. Repeat until all dough is gone. When each patty is done, remove from the oil and drain on some kitchen paper.
Serve hot with apple sauce. Enjoy!

My mother fixed these all of the time when I was growing up. She also made the world’s best Kartoffelklösse. I can’t wait to try your kartoffelpuffer!
