This is a traditional Cuban dish. It literally means “old clothes,” but it is actually shredded meat.
1) Boil meat in a pot with about 2 quarts water, chopped carrot, onion, crushed garlic, and green pepper for about 15 minutes. Reduce heat to medium-low, cover, and cook for about 2 hours or until meat can be shredded with a fork.
2) Remove the meat and allow to cool. Use 2 forks to shred the meat into thread-like strips.
3) Place the meat into a pan with the Sofrito, garlic powder, broth, and cooking wine. Salt to taste and cook for about 5 minutes.
4) Add the pimiento strips.
This can be served with white rice, black beans and plantains (either the sweet or green plantains).
