A very simple enchilada casserole that is sure to be filling.
Preheat the oven to 350 degrees F.
In a large skillet, cook the ground beef with the onions and green chiles (I only use a spoonful of the chiles, but you can use as much or little as you like). Drain the beef mixture and return to the pan.
Add one can of the enchilada sauce and heat through.
Pour a small amount of enchilada sauce into a 9×9 square pan. Pour the remaining sauce into a shallow bowl. Dip your corn tortillas into the sauce and layer as follows:
Corn tortillas
Ground beef mixture
Shredded cheddar
Repeat the layers (there should be two), top with another layer of tortillas, and top with another layer of cheese. (Alternatively you could leave off the extra layer of tortilla and cheese, depending on your tastes).
Bake in the oven for about 2o-30 minutes, just until the cheese is melted and starting to brown. Allow to cool for about 5-10 minutes, and serve.
