This is a beautiful and authentic Mexican dish that is colorful and delicious. I have served it many times and everyone was surprised to find out it was made with cactus! It has always been well recieved by everyone who has tried it.
The cactus is slippery like okra. Drain and rinse cactus strips thoroughly under cold water until they are not slippery, then chop to a 1/4-inch dice. Rinse and drain again and place in a bowl.
Remove seeds from tomatoes and dice. Dice onion. Rinse shrimp, drain and check for shell pieces. Add fresh cilantro and lime juice. Add salt to taste and toss. Sprinkle with crumbled cheese.
