Description

This is by far the best recipe for the classic peanut butter cookie. I always had to double the batch when bringing them into work—they were gone in 60 seconds flat!

Ingredients

  • ¾ cups Butter, Softened
  • ¾ cups Brown Sugar, Packed
  • ¾ cups Sugar, Divided
  • 2 whole Eggs
  • 1 cup Peanut Butter Creamy Or Crunchy
  • 1-½ teaspoon Vanilla
  • 2 cups Flour
  • ½ teaspoons Baking Soda
  • ½ teaspoons Baking Powder
  • ¼ teaspoons Salt

Preparation

Preheat oven to 350 degrees F. In a large mixing bowl, use an electric mixer to cream the butter. Add the brown sugar and 1/2 cup sugar and cream together. Beat in the peanut butter, then add the eggs one at a time, mixing until combined. Mix in the vanilla extract.

In a small mixing bowl, sift together the flour, baking soda, baking powder and salt. Add dry ingredients to the creamed mixture and mix well.

Pour the remaining 1/4 cup sugar in a small bowl. Take a heaping tablespoon of dough and form into a ball. Coat the ball in sugar by rolling it around in the bowl. Place on an ungreased cookie sheet about 2 inches apart.

Press the tines of a fork into the balls to create the cross-cross pattern on the top and to flatten the dough a titch. Bake for 10 to 12 minutes or until cookies are set and lightly brown around the bottom edges.

I was looking for a peanut butter cookie that would satisfy my sweet tooth and this did it. It was so delicious and soft on the inside. Everyone who tried one said they were like little cakes and the best cookie they’d had. I added a cup of choc chips and a cup of walnuts because I had them on hand as well and they complimented the peanut butter so well. Thanks for sharing this recipe!

My husband and I were sitting around today both craving sweets, so I hopped on here and found these cookies. Wonderfully delicious! Rolling them in the sugar before putting them on the pan makes them have a wonderful outer crispness with a nice and chewy inside. I added 1 cup of mini chocolate chips to satisfy my husband chocolate tooth. Great recipe, I see why you double it for work! BTW, love your blog, too!

These are my new go to pb recipe! My husband’s favorite cookie is Peanut Butter. I made these for our 13th anniversary the other night and he loved them!
