This is a very easy recipe. However, you do need a pizzelle iron to make them. I used an antique Luxembourg waffle iron that has been in my husband’s family for generations. These cookies are a very sentimental treat for him.
Heat the waffle iron.
Cream the butter and sugar together. Slightly beat the eggs and then add to the butter and sugar. Then add the flour.
Add 1 tablespoon of batter to the hot iron ( I have a small scoop and it works perfectly).
Close the iron. Some of the dough will squeeze out the sides- you will need to trim this off with a knife. Heat for approximately 2 minutes on one side, then flip and cook for approximately 1 minute on the other side.
Quickly remove from the heat and separate the two cookies by cutting with a knife, then pull the cookie out.
This is really a two- or three-person job. The cookies need to then be quickly rolled before they cool off.
